Spiced Apple and Blackcurrant Granola
Autumn brings a new, seasonal flavour to the granola menu…Spiced Apple and Blackcurrant Granola.
This is a fabulously fruity, seasonal granola that is handmade with pure Scottish wholegrain jumbo oats, sweetened with honey, gently spiced with ground cinnamon, ginger, nutmeg, cloves and coriander seed, and slowly toasted to a deliciously autumnal crunch. Freeze dried apple pieces add natural sweetness and freeze dried blackcurrants add a characteristic tartness to the granola.

Of course, there was a bit of a development process to this granola (like all the others). I wanted to mix stewed apples and warm honey into the jumbo oats and bake it all to lovely, apple-y crunch. But what I ended up with was a slightly soggy, apple crumble mess. Thankfully, the perfect antidote to this is to use dried apple and, in particular, freeze dried apple pieces from Podberry of Coupar Angus in Perthshire. They also freeze dry blackcurrants. I had to pair them up in this granola, which was then crying out for some warming autumnal spices.
In terms of flavour, the freeze dried apple pieces add a natural sweetness and the freeze dried blackcurrants add a characteristic tartness to the granola. I was surprised at how tart the blackcurrants are (forgetting that I was eating fruit, not jam!), but I do like them in their unsweetened, natural state. I think the honey in the granola provides enough sweetness overall, but if the tartness of the blackcurrants is too much, feel free to add your own sweetener.
