Mighty Bites for Mighty Hikes

These very tasty 'Mighty Bites' are great to have in your pack when hunger hits on your outdoor adventures. They are incredibly easy to make - but you do need a food processor.


Ingredients

250g dates (stones removed)

125g porridge oats

100g desiccated coconut

40g coconut oil

40g honey (or maple syrup)

30g cocoa powder

15g black chia seeds

An extra 100g desiccated coconut to roll the balls in.



Method

1. Put the dates and coconut oil in the food processor first, and pulse until the dates have broken up into small chunks.



2. Add the rest of the ingredients and continue to pulse until the mixture resembles soil (don’t let that reference put you off!).


3. Tip the mixture into a large bowl and, with your hands, form the mixture into little balls. I made 16, but you can obviously make them bigger or smaller, as you prefer.


4. Put the extra desiccated coconut into a clean bowl. Again, using your hands, pick up some coconut and roll each ball into the coconut until it’s covered.



5. Store in an airtight container and eat within a week.
