Nutty Granola: my signature granola

Nutty Granola is one of my most popular products, so here’s a little insight into how I make this flavour.

This was actually the first granola I ever made and the recipe has not changed much at all since I started Green’s Granola in late 2015.

My initial aim was to create a product that I wanted to eat, but could not find in the shops: a wholesome, natural, nutty granola with a crunchy and chunky texture and a bold and unique flavour.

I start with Scottish wholegrain jumbo oats from Aberdeenshire and subtly spice the oats with ground ginger and cinnamon. I then add a generous helping of sunflower and pumpkin seeds. Over this oaty base, I drizzle a blend of warm honey and a little rapeseed oil, then slowly bake it to a nice, earthy crunch.

For me, the nuts had to be the star of the show, with just the right amount of crunch. I gently hand roast the whole almonds, toast the pecan nuts and chop the Brazil nuts into chunks, ready to add to the granola when it has cooled.

In 2022, I won a Great Taste 1-Star award for my Nutty Granola. The judges described it as “A visually pretty and appetizing granola with plenty of seeds, nuts and grain. There are whole nuts, chunks of nuts – all of which are fresh and crunchy. Quality ingredients. Not too sweet. This has a satisfying crunch – not too hard and harsh. The spicing is well judged – a hint more than an overwhelming punch. The cinnamon on the front and the gentle heat of ginger on the finish. A delicious combination of excellent, fresh ingredients.”

I was delighted with the judges’ feedback, as it pretty much summed up what I was trying to achieve with my Nutty Granola.

My favourite way to serve Nutty Granola is with apple sauce and natural yoghurt. But it also goes really well with banana, berries and stewed rhubarb.
