Erika’s Everyday Granola: satisfyingly simple
I originally made this plain granola during lockdown for a lady who called me and requested granola with “no nuts, no seeds, no spices, no fruit and no coconut”! With the heightened sense of community and generosity that lockdown brought, I set to work making just two bags of plain granola for this lovely customer.
I actually really enjoyed this granola for my breakfast too, so I decided to take it to Perth Farmers’ Market for my customers to try. It now has a keen following there (and a proper label in a lovely shade of green).
So, my Everyday Granola really is a deliciously simple combination of Scottish wholegrain jumbo oats, honey and a little rapeseed oil. It's slightly sweet and crunchy, lovely just as it is, but also easy to augment with your own choice of nuts, seeds and fruit.
It appears to be quite a versatile product, too. One customer also uses it as a fruit crumble topping, another as a base for making flapjacks and another as a porridge topping.
In 2023, I entered my Everyday Granola into the Great Taste Awards, just to see what a panel of independent judges might think of such a simple granola with only three ingredients.
They seemed to like it! I won a Great Taste 1-Star award for my Everyday Granola, with the judges commenting: “A delightfully crunchy, toasty granola with lovely crispy lumps in it and no dusty bits! The oats are creamy, the flavour natural and not over sweetened. Wholesome and delicious.”
