Almond and Orange Flapjacks for your Outdoor Adventures

Heading out for a hill walk? Gearing up for a big bike run? If I’m doing either of these, I always take some oat-based snacks with me to fuel up on the go. I wanted to share this recipe with you, as it’s one of my favourites. These Almond and Orange Flapjacks provide great fuel and a good amount of protein. And they’re really tasty.


So, gather up your ingredients for this easy tray bake, follow my recipe and within an hour or so you will have a stack of bars to take with you on your outdoor adventures.


Ingredients

  • 175g jumbo oats

  • 175g porridge oats

  • 100g flaked almonds

  • Zest of 2 oranges

  • 175g soft brown sugar

  • 175g butter

  • 100g honey

  • Quarter tsp almond extract


Directions

  1. Heat your oven to 160°C.

  2. Grease and line a 24 x 20cm baking tray.

  3. In a bowl, combine the oats, flaked almonds and orange zest.

  4. Put the sugar, butter, honey and almond extract in a large pan and melt on a low heat. Stir frequently until the mixture is smooth.

  5. Take the pan off the heat and tip the dry ingredients into the pan. Mix gently until all the dry ingredients are coated.

  6. Put the flapjack mixture into your prepared baking tray and, using a fork, spread the mixture gently and evenly (don’t press down too hard).

  7. Bake for 20-25 minutes or until light brown.

  8. Leave to cool in the baking tray. When cool, turn out onto a chopping board and cut into bars.
